Palazzo Castelletti recently celebrated its third anniversary in the company of its top customers, with a sumptuous repast in aid of Dar Tal-Providenza.
On the 8th November, Managing Director of the catering complex, Keith Psaila, showed his appreciation towards his clientele’s loyalty with an exclusive mouth-watering five course tasting menu, combined with a wine pairing presented by Josef Bonello, featuring an array of South Australian wines.
An Amuse Bouche was paired with Live Wire Riesling Langmeil Barossa, followed by a luscious Vitello Tonnato; thinly sliced veal, tonnato sauce, caper berries, tomato petals, garden leaves and sweet paprika. This was well teamed with a Spring Fever Eden Valley Chardonnay Langmeil Barossa.
The third course consisted of Risotto Nero di Sepia, with char-grilled marinated squid, garlic and marjoram fruit, paired with Viognier Langmeil Barossa. A heavenly dish for fish lovers!
To cleanse the palette, the guests were then treated to a lemon cream mandarin sorbet and fresh carved fruit, readying them for braised Pork Cheeks with root vegetables, potato purée and jus. This was teamed with SMG Three Gardens Langmeil Barossa.
On a sweet note, the meal ended with coffee and peach, marshmallow bars and white chocolate ice cream, accompanied by Live Wire Medium Sweet Riesling Langmeil Barossa.
