A TRUE WAFFLE BRO – DANIEL MICALLEF

Daniel Micallef is the man responsible for the many satisfied smiles after every mouthful at Waffles Bros in Ta’ Xbiex. Having first introduced his amazing Waffles at a food stand at Isle of MTV back in 2014, Malta now has a dessert-filled sanctuary where anyone can soothe their sweet and savoury tooth. We’ve caught up with Mr Micallef for further insight:

Before settling in Malta, you had been on a long culinary journey across many countries. How have your travels shaped your love for catering?

Travelling is the most educational and fun way to learn the foods people from all over the world enjoy as well as the trends. Having run restaurants overseas and having worked in catering environments to the likes of first class catering on international airlines, we’ve learnt to fuse good flavours, fun concepts and tasty fresh food to tingle your taste buds and still not break the bank. This is where the waffle comes in; the base to all our dishes, both sweet and savoury. To many, waffles are pancakes with abs! In our case, the waffle is the most versatile platform, which is baked and made fresh every day.

 

While on a visit to New York, inspiration had struck after eating waffles from a very famous street food truck. This is how our waffle cart had taken off at Isle of MTV in 2014. This then took us to venues at Smart City, private events at Cafe Del Mar, weddings, parties, concerts, Notte Bianca and office parties, to mention a few. After seeing the demand, we embarked on an Espresso bar theme, with a large selection of espresso based drinks and fresh loose leaf teas, which are served in your own personal tea pot. We now also have a selection of cafe food, including a build-your-own salads, freshly made daily soups, home made arancini and the occasional Orzotto – a risotto made with farro. We also offer a selection of Casillero del diablo wines, as well as cocktails and premium spirits.

 

What constitutes the perfect waffle?

The perfect waffle would be made fresh using the correct ingredients and cooked at a certain temperature for a very particular amount of time. You must come and try it for yourself!

What Maltese flavours go well with waffles?

We actually have a savoury waffle called The Local Way. This is topped with ġbejna, pears and local honey. We always use local fresh fruit and vegetables, and only serve fruit that is in season. Our most popular combination would be fresh strawberries and sweetened fresh ricotta topped on our Liege Waffle. Another local favourite is banana and nutella, although we have had orders such as fried eggs and nutella. We leave the options open to all patrons for them to build their own using their favourite toppings.

 

If you had to explore any other cuisine aside from the Belgian dessert, what would it be and why?

We’ve fused the delicacy of Belgian desserts with the bustle of everyday life, so we’ve introduced our take-away options. Apart from waffles, we also have the option to take away salads and soups.

 

You’re coming up to your one year anniversary. What should we expect?

The 11th March will mark our first year in operation at The Marina Business Centre in Ta’ Xbiex. We’ll be celebrating our birthday with our newest treat – The Waffle Freak Shake – in collaboration with Monin, as well as a brand new flavour selection of thick shakes. This will also be on offer with our latest espresso based drink, the Affogato, which is a scoop of astiginale vanilla ice cream topped with a shot of freshly brewed espresso, a brand new locally inspired loose leaf tea, as well as our selection of Casillero del diables.

We’ll be offering our mini waffle bites to all patrons who visit us this weekend, through which we’ll be showcasing several varieties of our waffles in just one little bite.
