Add aubergine to your cooking!

I was never a big fan of aubergines, then I learnt how beneficial the vegetable is and decided to change that!

What nutrients can we find in aubergines? B complex, Potassium, Copper, Magnesium, Manganese, loads of fiber, phytonutrients, antioxidants, phenolic acids, proteins, vitamin C, calcium, iron, healthy fats, phosphorus, zinc, nicotine.

Did you know that high amount of B complex vitamins in aubergine can help us think clearly and prevent stress?

Are TRYING TO QUIT SMOKING? Aubergine is perfect for you! It contains small amounts of nicotine, so adding it to your diet will help with cigarette cravings.

What’s more, due to the high water content, vitamins, minerals and healthy fats in aubergine, it can help keep our hair healthy and strong, prevent our nails from becoming brittle and dry and keep our skin glowing, soft and well hydrated naturally. And this is a result I am looking forward to ;)

Step 1: Introducing aubergine to your cuisine by checking for recipes that will suit your family’s tastes:

–   Easy ratatouille with poached eggs

Step 2: Purchase of a perfect aubergine, in my case, from a lady who walks around my neighbourhood and sells veggies from an old pram. DONE!

Step 3: Choose a dish that will win the hearts of your family members that you could eat aubergines more often.

DONE! I made aubergine, tomato, chilli bacon and pasta.

I can proudly admit that the challenge was completed with a huge success and aubergine is a frequent guest at our kitchen table now!

I did get one request though – to add more meat to my recipes. Ah men and their hunter instinct…
